Made from pasteurised goat’s milk, Monte Enebro is shaped into a distinctive flattened log ('pata de mulo' or 'mule’s leg'), with its signature Penicillium roqueforti rind, the same blue mould used in Roquefort production. Unlike blue cheeses, the mould remains on the surface rather than inside, creating a tangy, minerally flavour with notes of citrus, walnuts, and earthy undertones. As it matures, the paste softens from the rind inward, developing a complex, creamy texture with a lingering, slightly piquant finish.
