Heckfield is a semi-hard Guernsey cow’s milk cheese made with vegetarian rennet. It’s matured for 8-9 months and is named after Village Maid's local farm less than 2 miles away where the milk is produced, at Heckfield Park Farm.
Heckfield displays a rich umami flavour and a buttery texture that melts in the mouth. It is naturally golden from the carotene present in Guernsey milk. The texture is often compared to 'hard butter', however the flavour is strong and robust, similar in profile to a mature cheddar.
Unlike most cheeses, we believe Heckfield is best served straight out of the fridge! This retains that beautiful 'hard butter' texture. Serve with pickled onions, ploughman’s chutney and fresh crusty bread. In cooking, try a slice of Heckfield on top of a burger or in place of cheddar for an amazing Welsh rarebit.
