Aged for a minimum of 30 days, Tomme de Savoie develops a firm yet creamy interior, speckled with small, irregular holes, and covered by a thick, grey-mottled natural rind. The flavour is mild, buttery, and slightly tangy, with delicate nutty, grassy, and mushroomy notes that reflect the rich Alpine pastures where the cows graze. Compared to other Alpine cheeses, Tomme de Savoie is lighter in fat content, as it was traditionally made from the milk left after butter production, giving it a uniquely smooth yet lean texture.
