The flavour profile is buttery and mildly sweet when young, deepening into complex, nutty, and caramelised notes with hints of hay and alpine flora as it matures. Longer-aged varieties also develop tiny, crunchy tyrosine crystals, a sign of excellent affinage (maturation).
