Tête de Moine AOP/PDO is a unique and aromatic Swiss cheese, crafted in the Jura mountains for over 800 years. Its name, meaning 'Monk’s Head,' originates from the monks of Bellelay Abbey, who first produced this cheese in the 12th century. Unlike most cheeses, Tête de Moine is not cut but delicately shaved into thin, floral rosettes using a special tool known as a Girolle, enhancing its silky texture and releasing its intense aromas.

Made from raw cow’s milk, Tête de Moine is aged for a minimum of 2.5 months on wooden boards, allowing it to develop its smooth, semi-hard consistency and complex, nutty flavour.
