Situated on the northern edge of the New Forest in Hampshire, Lyburn Farm has been farmed by the Smales family for over 50 years. Cheese-making at Lyburn Farm began in response to market changes, evolving from a traditional dairy farm to an artisanal cheese producer. The farm, known for its sustainable practices, produces a variety of cheeses using milk from its herd of cows.
Lyburn Farm's range of cheeses includes the award-winning Lyburn Gold, Winchester, and Old Winchester. These cheeses are crafted using methods inspired by continental styles, such as Gouda, and have garnered numerous accolades, including gold medals at the British Cheese Awards. The farm also produces unique cheeses like the garlic and nettle-infused Lyburn Gold and the mould-ripened Stoney Cross, similar to a French Tomme de Savoie.
The Smales family's commitment to quality and sustainability is evident in their farming and cheese-making practices. The farm generates much of its electricity from solar power and reduces its carbon footprint by using fresh milk directly for cheese production, eliminating the need for refrigeration and transport.
